Low FODMAP Lentil Walnut Tacos

Serves: 4 (2 tacos each)

Ingredients:

  • 2 Tbsp garlic-infused olive oil*

  • 1 medium carrot, chopped

  • 1 red bell pepper, chopped

  • 1 Tbsp green onion stems, chopped

  • 1/2 c walnuts, chopped

  • 1 can lentils, drained & rinsed

  • 1 Tbsp low FODMAP taco seasoning*

  • Tortillas of choice (gluten-free flour, grain-free, or corn)

  • Toppings of choice**

Directions:

  1. Heat olive oil in a large skillet. Add carrot and bell pepper, combine with the oil, then cover and cook for 8-10 minutes, until carrots are soft. 

  2. Add green onion stems and walnuts, combine with the oil, then cook another 5-8 minutes. Add lentils and taco seasoning, mix well, then cook another 3-4 minutes.

  3. Prepare tortillas by grilling in a skilling or warming in the oven. Fill each tortillas with 1/4 c mixture, then add your toppings of choice! 

*My favorite taco seasonings:

  • Shredded low-lactose cheese

  • 1/8 avocado

  • Low FODMAP salsa 

  • Shredded lettuce

  • Diced tomatoes

  • Chopped cilantro

  • Lime juice
